As quick as can be - this Blender Apple Bread takes only minutes to whip up. Super moist and scrumptious!
My fun with the blender recipes continues. I mentioned this Apple Bread in the last post and today it's time to share the recipe. Just like the Blender Apple Butter, this bread takes minutes to whip up in a blender.
Besides, you can never have too many recipes for quick breads for the cold seasons. They are fun to make and even more fun to snack on. Afternoon tea time is a good excuse to make them.
I know that when you think about things to make using a blender, baked goods are most likely not on top of your list (hello smoothies, homemade peanut butter or Nutella) but you really can easily whip up a batter for cupcakes, muffins or breads.
This recipe requires only 1 and a half of a Granny Smith apple (snack on the other half while the bread is baking) and all you need to do is quarter it because the blender does the rest. The only thing I would do differently next time, is to bake this bread in a smaller pan, like 8" x 4" loaf pan instead my 9" x 5" pan. The bread is on a shorter side but that does not affect the taste or the texture.

Ingredients
- 1.5 cup all-purpose flour
- 1 teaspoon ground cinnamon
- ½ teaspoon baking soda
- ½ teaspoon salt
- ¼ teaspoon baking powder
- ¼ teaspoon ground nutmeg or cloves
- 1 large egg beaten
- 1 cup granulated sugar
- 1.5 Granny Smith apple peeled and quartered
- ¼ cup vegetable or canola oil
Instructions
Grease and flour a 8" x 4" loaf pan. (If using 9" x 5" loaf pan, keep in mind that the bread will be a little shorter). Set aside.
Preheat the oven to 350 degrees F.
In a blender, place all dry ingredients (flour, cinnamon, baking soda, salt, baking powder and nutmeg). Pulse few times to mix the ingredients.
Add egg, sugar, quartered apples and oil.
Pulse few times until the apples are chopped and the ingredients are mixed.
Do not overmix.
Scrape the batter into your prepared pan.
Bake in preheated oven for 50 to 55 minutes, or until the toothpick inserted in the center comes out clean.
Cool in pan on a wire rack for 10 minutes.
Invert the bread onto a cutting board and cool completely.
Serve.

Hi Becca! I used quite powerful blender for this recipe. If your blender is struggling to mix all ingredients, I suggest chopping the apples into small pieces and blending the batter ingredients first and then adding apples. Hope this helps!

This is so interesting! I recently went to a gluten free baking class and they made a blender bread with apples and bananas. I was so intrigued and now I want to try it with a flour version too!

That is so cool, Anna! I have a cheapo blender at home but it should do the job. I'd love one of the fancier machines, like a Vitamix. Someday! I love making quick breads. I try to make a loaf every weekend so that I can snack on it during the week. My husband will love the apples in here.
